The combination of Mother Raw Smoky Chipotle Dressing and cedar wraps infuse tons of flavor and result in a perfect grilled side dish. We love using cedar wraps because they are an environmentally friendly alternative to aluminum foil. Be sure to soak your cedar wraps and string ahead of time to get this on the table quickly.
You can easily swap in or add any more vegetables you want, here, too. Alternatively, skewer your marinated veggies for simple, smoky kebabs.
Grilled Cedar-Wrapped Seasonal Veggies With Smoky Vegan Chipotle Dressing
When it comes to grilled veggies, we love a good smoky flavor. This dish gets a kick from a vegan chipotle dressing.
- 2 medium zucchini ( ½ thick slices)
- 1 bunch asparagus (ends trimmed)
- 2 bell peppers (sliced into strips )
- ½ cup Mother Raw Smoky Chipotle Dressing
- 4 cedar wraps (soaked for at least 10 minutes )
Heat the grill over medium-high heat.
Place the veggies in a bowl or baking dish and add the Mother Raw Smoky Chipotle Dressing and toss to combine.
Layer the veggies on top of the cedar wrap and then fold the ends in to make a wrap, using the string to tie it together.
Place on the grill, over indirect heat and close the lid. Grill for 10 to 15 minutes, until the veggies are just cooked through.
Remove the wraps and let cool slightly before untying. Serve with more dressing. Enjoy!
